The Chardonnay grapes originate from northeastern Bulgaria, from the vineyards of Aya Estate Vineyards, located near the Black Sea. The area is characterized by a cool Black Sea climate and constant sea breezes that help the grapes retain their freshness and varietal character. The vineyard block from which the other varieties come is located in the village of Harsovo, in the region of Melnik. The vineyards are situated on sandy and permeable soils with good drainage, and the climate there is characterized by high daytime temperatures and cool air currents in the evening that descend from the surrounding mountains. Biodynamic practices are applied in the vineyards.
The harvest begins with the collection of the crop from Marsanne, Roussanne, and Viognier in mid-August, while the Chardonnay grapes are harvested at a later stage – in the first ten days of September. The first three varieties ferment together as a separate wine, while the last one ferments independently. The reception is carried out without crushing the grapes to avoid roughening the wine during the operation. After the alcoholic fermentation of the first wine, periodic racking of the lees is performed to achieve a more complex profile. Once the desired organoleptic characteristics are reached in the appropriate proportion, a blend is made with the Chardonnay wine.
The color is golden with slight greenish hues. The aroma is dominated by floral notes characteristic of Viognier and Marsanne. The well-expressed acidity is excellently balanced with the volume and density of the taste. The wine finishes with a long aftertaste, with slight mineral notes, leaving a pleasant sensation of freshness.

AYA Estate Vineyards
AYA Estate Vineyards is a company, the successor of viticultural knowledge for several generations, with over 80 years of experience in artisanal wine production. These traditions determine the direction of the project - the revival of endemic Bulgarian varieties and focusing on the terroir expression of wine, thanks to working with nature, not against it. The main massifs are located in southwestern Bulgaria, in the village of Harsovo, Melnik region, but also have 10 hectares in northeastern Bulgaria, only 2 km from the Black Sea, near Cape Kaliakra, which determines the freshness of white wines produced by Seewines. , especially emblematic of which is Sauvignon Blanc. The vineyards in Harsovo, from which the Shiroka Melnishka vine grapes are extracted, are over 50 years old, and the new plantations with Sira, although still young, impress with their potential and the pronounced peppery characteristics of the variety. Seewines follows the principles of biodynamics, both in the vineyards and in the wine production itself, maintains the biodiversity in and around the vineyards and practices the most sparing and environmentally friendly viticulture.

Struma Valley
The Struma Valley region encompasses the southwestern part of Bulgaria and the Bulgarian part of Macedonia. The climate in the region is specific and is strongly influenced by the warm currents from the Mediterranean Sea. The main grape varieties here are the local endemic variety Broad Melnik Vine, Melnik 55 (a cross between Broad Melnik Vine and the French variety Valdigie), but also the international varieties Cabernet Sauvignon, Merlot, Syrah, and others. Due to the dry climate and high temperatures, the wines develop warm southern tones in the aroma, with hints of ripe fruits and a dense rich body. Of particular interest are the wines from Broad Melnik Vine, partly due to the fact that the variety is difficult to cultivate, as it ripens in late autumn. Today, the region is the most dynamically developing in Bulgaria, with many new, small, family wineries increasingly focused on the quality and terroir expression of the wines they produce.

Marsan
Сортът Марсан (Marsanne) е бяло грозде с произход от района на Северна Рона. Той много прилича на сорта Русан, с който традиционно се отглежда и също често се бърка. Извън Франция се отглежда и в Швейцария, Испания, Австралия, Нова Зеландия, Канада и Съединените щати. В Италия той е въведен от войските на Наполеон и се отглежда в Емилия, в района на Пиаченца и в Тоскана. Въпреки че не е толкова чувствителен като Русан, Марсан е склонен да дава лоши резултати, ако се отглежда на неидеални места. Например при прекалено горещ климат гроздето може да узрее прекалено много и да се получи „вяло“ вино с малко киселини и аромат, а при прекалено студени места то трудно узрява напълно и полученото вино е безвкусно и неутрално. За да поддържат подходящо ниво на киселинност, лозарите се опитват да събират реколтата от Марсан точно преди да достигне пълна зрялост. От него се произвеждат вина с интензивни цветове, плодов крушов аромат и нотки на подправки. Предвид захарното съдържание на гроздето, вината, произведени, могат да бъдат богати на алкохол и имат известна склонност към отлежаване в дъб. С отлежаването виното от Марсан придобива още по-тъмен цвят, ароматите стават по-комплексни, на мед, ядки и дюли, а небцето показва почти мазна текстура.
