OLD WORLD - The term "Old World wine" is reserved for wines produced in Europe and the Mediterranean. Tradition plays a key role in the production process, from the hand-picking of grapes to the way of vinification and storage. The whole process in the "old world" is subject to many regulations and rules for every aspect of winemaking - from viticultural practices, through fermentation ones, and even to the label and the way of sale.
The taste characteristics are quite typical - usually in the tendency to lighter wines with lower alcohol levels. The environment or terroir in which the wine is grown (the combination of microclimatic and soil conditions) is one of the most important factors determining the individuality and profile of "old world" wines.
