This Riesling is the result of many accumulations. Its creator is Stefan Pirev, who is a universally recognized master of white varieties, among which Riesling is particularly his great weakness. The vineyard is a specific plot, and what will impress you about the wine is its varietal expression - of honey, acacia, and noble notes of spices and petrol. Fresh and flexible, it can be drunk or stored. Try it well chilled with spicy Eastern dishes, cold meats, or duck liver with oranges.

В края на XIX в. на мястото на Bononia Estate e създадена една от първите пивоварни в страната, но в годините на прехода тя потъва в забрава. През 2013 г., във вече модерна България, предприятието започва да се възражда като винарна с внедрени актуални технологии, от семейство, което обича страната си, и е решено да развива бизнес в нея. Хора, влюбени в авиацията, и водени от вярата, че трябва да оставиш своя дух да полети, за да сбъднеш мечтите си. През 2013 година са засадени първите 400 декара с млади лози, като към днешна дата лозовите масиви се простират на над 1300 дка. Желанието на собствениците е насажденията да достигнат до площ от 1500 дка, формирани по резитбата на д-р Гюйо, в които да се отглеждат различни по вид сортове като Совиньон Блан, Шардоне, Траминер, Вионие, Ризлинг, Мускат Отонел, Пино ноар, Пино гри, Каберне Фран, Каберне Совиньон, Сира и традиционната за региона българска Гъмза. Младите лози са прецизно подбрани от Италия и Франция, спрямо международното потребителско търсене. Мечтата на семейство Йотови е не само да изградят една от най-добрите изби в Източна Европа, но и да спомогнат за възвръщането и затвърждаването на позициите на българското вино по света.

Danubian Plain

This region extends from the banks of the Danube River to the slopes of the Stara Planina, encompassing the fertile Danube plain. It is characterized by a moderate continental climate with hot summers and a large number of sunny days. The varieties 'Muscat Ottonel', 'Gamza', 'Cabernet Sauvignon', 'Merlot', 'Chardonnay', 'Aligoté', 'Pamid', and others are widespread. Here, dry white wines, sparkling wines made using classical technology, and quality red wines are produced, which are characterized by a rich fruity aroma and fresh taste. A typical local variety is Gamza, also known in Serbia and Hungary as Kadarka. This is a red variety mainly grown in the Vidin and Pleven regions, which ripens at the end of September and produces fresh, fruity, and pleasantly tart wines with a characteristic aroma of raspberries and forest fruits.

Riesling

Riesling is an aromatic white grape variety that produces wine in the entire range - from botrytized sweet (one of the best in the world) to dry and semi-dry varieties, with captivating aromas of citrus and stone fruits, as well as the typical petroleum aroma, which in certain terroir appearances can dominate sensitively. Riesling's homeland can be said to be the valleys of the Rhine and Moselle rivers in Germany - the variety likes cooler weather. Naturally, here are the main wine regions of the country (Moselle, Rheinhessen, Rheingau, Pfalz). The vineyards are located on the steep hills, making mechanisation difficult, so here the viticultural activities are mainly manual. The wines from these regions are fresh and with a pronounced acidity. However, Riesling in Germany is by no means the main variety, in fact another is the wine region in which this variety is most common - and this is Alsace in France (or Elsaß in German). Unlike the German Riesling, the French Riesling is more saturated and lush due to the specifics of the microclimate there - the Vosges Mountains provide protection from northern winds and cold, and the sun is more generous in this southern region. Outside of these countries, perhaps Austria also presents itself with an interesting reading of this often called king of white varieties, and some countries of the New World successful experiment with it as well.
