Kapatovo Chardonnay 2020 – a limited edition wine created from the first variety of white grapes planted in KAPATOVO Family Estate in 2008. The wine has aged for more than 6 months in French oak barrels Ermitage and Berthomieu. The body is rounded and juicy. The taste is long due to the still pronounced freshness and minerality. The aromas are of white peach, ripe citrus, and white flowers, complemented by a spicy mix of spices, nuts, and vanilla. Suitable for serving with seafood and sushi.

Kapatovo

Respect for nature and its gifts is what unites the team of gardens and vineyards "Kapatovo". The establishment of the farm began with the purchase of the first lands in 1997 to reach 1,200 acres in 2010. The past years have helped to gain invaluable experience and knowledge about the peculiarities of the local climate, the natural challenges facing the farmer. This leads to "our recipe" for agriculture - investment and human care. The perennials are fully secured with drip irrigation, funds are invested in agricultural machinery, refrigerators, packaging and sorting base, commercial base. The farm in the family estate is developing, following the most important priorities - care for the land and vineyards, the expectations and needs of customers.

Struma Valley

The Struma Valley region encompasses the southwestern part of Bulgaria and the Bulgarian part of Macedonia. The climate in the region is specific and is strongly influenced by the warm currents from the Mediterranean Sea. The main grape varieties here are the local endemic variety Broad Melnik Vine, Melnik 55 (a cross between Broad Melnik Vine and the French variety Valdigie), but also the international varieties Cabernet Sauvignon, Merlot, Syrah, and others. Due to the dry climate and high temperatures, the wines develop warm southern tones in the aroma, with hints of ripe fruits and a dense rich body. Of particular interest are the wines from Broad Melnik Vine, partly due to the fact that the variety is difficult to cultivate, as it ripens in late autumn. Today, the region is the most dynamically developing in Bulgaria, with many new, small, family wineries increasingly focused on the quality and terroir expression of the wines they produce.

Chardonnay

Chardonnay is the world's most famous white-wine grape and also one of the most widely planted. Of course, the most highly regarded expressions of the variety are those from Burgundy and California, but many high-quality examples are made in Italy, Australia, New Zealand and parts of South America. Describing the flavours of Chardonnay is not easy. This is not thanks to the complexity of the varietal itself but usually due its susceptibility to winemaking techniques - such as Malolactic fermentation which gives distinctive buttery aromas or Fermentation or maturation in oak barrels which contributes to the wine with smokey notes of vanilla, honey and even cinnamon, and not last the lees contact while in barrel imparts biscuity, doughy flavours. And all these incorporated with the varietal aromas of tropical (banana, pineapple and guava) to stone fruits (peach, nectarine and apricot), sometimes even citrus and apple notes. Climate plays a major role in dictating which fruit flavours a Chardonnay will have - warm regions (California, Australia ) make more tropical styles; temperate zones (southern Burgundy, New Zealand) - stone fruit notes, while the very coolest (Chablis, Champagne) lean towards green-apple aromas.
