Chardonnay Brut Nature “Midalidare Pas Dosé”, Blanc de Blanc made using traditional method. The grapes are grown in the vineyards of PRISOVETE and DABOVETZ (certified for organic production). Sparkling, golden-yellow color with a green hue. Dense mousse of fine bubbles with a very long play. The nose is dominated by ripe apple with a pleasant citrus bitterness. The aroma flows into the taste with a sensation of green apple and citrus peels. Midalidare Deluxe Brut NV is a fresh wine with a tight body and good structure. The finish is long and elegant with an apple-citrus aftertaste. Excellent aperitif. It pairs wonderfully with fried foods, shellfish, fatty fish, white meats, pasta, hard cheeses, and desserts.

Midalidare

Midalidare Estate is a wine estate located 20 km northwest of Chirpan in the village of Mogilovo. The project is based on Evgeny Yusupov, a Russian businessman living in Kazakhstan, and his love of history, nature and good wine prompted him to invest in the village of Mogilovo before three years and turn this piece of land into a real oasis. The mansion has 250 acres of vineyards nestled between the hills of Central Sredna Gora. The white varieties are - Sauvignon Blanc, Semillon, Pinot Gris, Chardonnay, Muscadel, Grenache Blanc and the red - Cabernet Franc, Merlot, Malbec, Syrah, Cabernet Sauvignon and Petit Verdot, selected in unison with the climatic features and soil characteristics of the region.

Thracian valley

In this region, which includes Southern Bulgaria, the climate is moderately continental, protected from the northern winds thanks to the Balkan Mountains, with a good distribution of rainfall. It includes the central parts of the Thracian Plain and parts of Sakar. Most of the red grape varieties are concentrated in this area. The varieties grown include 'Mavrud', 'Merlot', 'Cabernet Sauvignon', 'Red Muscat', 'Pamid', and others. The climatic conditions of the region favor the production of rich, dense, memorable red wines from the varieties 'Cabernet Sauvignon' and 'Mavrud'. Good wines from the local variety 'Mavrud' are particularly valued because they combine the aroma and taste of red berries, spices, and herbs.

Chardonnay

Chardonnay is the world's most famous white-wine grape and also one of the most widely planted. Of course, the most highly regarded expressions of the variety are those from Burgundy and California, but many high-quality examples are made in Italy, Australia, New Zealand and parts of South America. Describing the flavours of Chardonnay is not easy. This is not thanks to the complexity of the varietal itself but usually due its susceptibility to winemaking techniques - such as Malolactic fermentation which gives distinctive buttery aromas or Fermentation or maturation in oak barrels which contributes to the wine with smokey notes of vanilla, honey and even cinnamon, and not last the lees contact while in barrel imparts biscuity, doughy flavours. And all these incorporated with the varietal aromas of tropical (banana, pineapple and guava) to stone fruits (peach, nectarine and apricot), sometimes even citrus and apple notes. Climate plays a major role in dictating which fruit flavours a Chardonnay will have - warm regions (California, Australia ) make more tropical styles; temperate zones (southern Burgundy, New Zealand) - stone fruit notes, while the very coolest (Chablis, Champagne) lean towards green-apple aromas.
