Civico 10 Vermouth by Sibona
Art. # 5654Civico 10, also known as Via Roma 10 in the town of Piobesi d'Alba, is the address of the original location of Distilleria Sibona. It is there that the original recipe for this vermouth was created with passion and wisdom, which has recently been refined and enriched with the exclusive use of Nebbiolo d'Alba D.O.C. wine. Among the herbs and spices, the Piedmontese wormwood, sweet and bitter orange, vanilla, and gentian stand out most clearly. It is excellent with ice, as an aperitif and as a key ingredient in various cocktails.
Nebbiolo d'Alba D.O.C. wine with a slow infusion of selected herbs and spices (22 herbs were used, some of which are from Piedmont) according to a secret and original recipe from Sibona. It ages in stainless steel tanks.
The nose is refined and enveloping with intense citrus fruits, floral and spicy notes, and a clear sense of wormwood. Rich, velvety, harmonious, with a slight tannic palate. Red fruits and soft notes of bitter orange. A dense and pleasantly sweet finish. Perfect when served neat with ice. Ideal as an aperitif and as a key ingredient in various cocktails, such as Americano, Negroni, or Manhattan.

Antica Distilleria Sibona
The Antica Distilleria Sibona is located in the Roero zone, in the communal district of Piobesi d’Alba, a few kilometers from the city of Alba. The distillery is located in the center of an important wine area, where the most typical vines from Piedmont are cultivated: Nebbiolo vine from which Barolo, Barbaresco and Roero wines are created according to their own zones of production, besides Barbera, Dolcetto, Moscato, Chardonnay, Arneis and Brachetto vines. Sibona is one of the historical distilleries in the Piedmont region and can boast the oldest distillation license, the N° 1, issued by UTF (the official institution that regulates all the operations having to do with distilleries). This is a synonym for a great past and prestige. From its origins, Sibona distillery has handcrafted its “grappas” from single vine varieties. The distillation process consists of vapor production from fresh marc soon after it arrives in the distillery. Originally, distillation was carried out by means of an old locomotive, which, in time, gave way to copper alembics. Marc is distilled no sooner it arrives in the distillery, which allows the extraction of the grape’s full aroma. Besides the selection of the best marc of the zone, Sibona’s grappas reach high quality levels thanks to accurate distillation, constant updating and improvement of the equipment, the experience of two oenologists who have been working in distillation for years, the elimination of the first and last portions of the distillates, and last, but not least, a long ageing period in barrels, which renders the grappas not only soft and pleasant but also more complex and aromatic expression. The distillery uses a variety of cask types, such as port, sherry, madeira, whisky, rum and sauternes casks, with which it produces its special grappa reserves, including the XO grappa aged for over 6 years in French oak.
