The grapes for this wine come from two vineyards with completely different terroirs. The vineyards of Broad and Early Melnik Vine, as well as Sangiovese, are located in the area of the village of Harsovo. There, the terroir is characterized by sandy and permeable soils, high daytime temperatures, and cool evening breezes descending from the surrounding mountains. Pinot Noir comes from the vineyards near the town of Kavarna. The Black Sea climate, characterized by constant breezes, protects the grapes from a sharp increase in sugars and helps preserve acidity. In both vineyards, biodynamic principles of cultivation are practiced. The work is entirely manual, allowing for strict monitoring and control of quality. Broad Melnik Vine is over 35 years old, with a well-developed root system, which is a prerequisite for a more intense and complex flavor-aromatic profile. Early Melnik, Pinot Noir, and Sangiovese are young plantations, which on the other hand favors a fresher sensation in the wine itself.
The harvest is carried out separately for each variety and is entirely manual. The grapes from different varieties ferment in separate stainless steel containers. Pre-fermentation maceration is performed for about 2-3 days. Fermentation takes place at a temperature of around 23 degrees. After fermentation, maceration lasts about 3 days. Some of the wines are in contact with oak for varying periods of time. Upon reaching the necessary organoleptic characteristics, the wines are blended in precise ratios and proceed to bottling.
Brilliant ruby color with aromas of black cherry, sour cherry, and raspberry, herbal notes and pepper are discovered. Medium body with soft freshness and cherry pit in the finish of the taste.

AYA Estate Vineyards
AYA Estate Vineyards is a company, the successor of viticultural knowledge for several generations, with over 80 years of experience in artisanal wine production. These traditions determine the direction of the project - the revival of endemic Bulgarian varieties and focusing on the terroir expression of wine, thanks to working with nature, not against it. The main massifs are located in southwestern Bulgaria, in the village of Harsovo, Melnik region, but also have 10 hectares in northeastern Bulgaria, only 2 km from the Black Sea, near Cape Kaliakra, which determines the freshness of white wines produced by Seewines. , especially emblematic of which is Sauvignon Blanc. The vineyards in Harsovo, from which the Shiroka Melnishka vine grapes are extracted, are over 50 years old, and the new plantations with Sira, although still young, impress with their potential and the pronounced peppery characteristics of the variety. Seewines follows the principles of biodynamics, both in the vineyards and in the wine production itself, maintains the biodiversity in and around the vineyards and practices the most sparing and environmentally friendly viticulture.

Struma Valley
The Struma Valley region encompasses the southwestern part of Bulgaria and the Bulgarian part of Macedonia. The climate in the region is specific and is strongly influenced by the warm currents from the Mediterranean Sea. The main grape varieties here are the local endemic variety Broad Melnik Vine, Melnik 55 (a cross between Broad Melnik Vine and the French variety Valdigie), but also the international varieties Cabernet Sauvignon, Merlot, Syrah, and others. Due to the dry climate and high temperatures, the wines develop warm southern tones in the aroma, with hints of ripe fruits and a dense rich body. Of particular interest are the wines from Broad Melnik Vine, partly due to the fact that the variety is difficult to cultivate, as it ripens in late autumn. Today, the region is the most dynamically developing in Bulgaria, with many new, small, family wineries increasingly focused on the quality and terroir expression of the wines they produce.

Broad-Leaved Melnik
Melnik or Shiroka Melnishka loza ( Broadleaved vine of Melnik ) is an exceptionally rare variety grown only in the region of the town of Melnik and specifically in the appellation of Harsovo village. Melnik can produce powerful wines that respond well to extended maturation in oak. They tend to be exotically perfumed, richly textured and have ample tannins. Actually, the variety benefits from the long, stable autumn weather of the region and the main challenge for the producer is to have the patience to wait for the full ripeness of this late ripening variety - which usually happens in mid-October.
