The vine parcels with Broad Melnik grape are located in the lands of the villages of Harsovo and Kromidovo and are about 50 years old, which contributes to the elegant structure and terroir expression in the taste of the wine. The Pinot Noir vineyard is 18 decares and is located in the lands of the town of Kavarna, where the climate is Black Sea, and the constant breezes have a favorable influence on the vineyards, preventing a sharp rise in sugars and helping to maintain optimal acidity levels. The vineyards are grown organically by adhering to biodynamic practices, with the aim of stimulating healthy and deep root system growth.

Pinot Noir is a relatively early-ripening variety, and the harvest takes place on September 9. The Broad Melnik grape is a late-ripening variety, harvested around October 20. The two varieties are vinified separately, with the Broad Melnik grape aging in oak barrels for one year. After reaching the desired organoleptic profile, the two wines are blended in proportions of 70% Broad Melnik grape and 30% Pinot Noir.

The series consists of 8800 bottles.

The color is ruby red. A complex aroma with predominant notes of red and black fruits, complemented by spices and tobacco. The wine is rich, spicy, with well-integrated tannins. The aftertaste is long, with a pleasant sensation of freshness and sweetness.

The wine would pair well with dried meats, especially venison ham, but also with chicken, lamb, as well as various types of pasta. Lighter desserts, as well as some soft and hard cheeses, would pair very well, complementing the freshness and spiciness of the wine.

AYA Estate Vineyards is a company, the successor of viticultural knowledge for several generations, with over 80 years of experience in artisanal wine production. These traditions determine the direction of the project - the revival of endemic Bulgarian varieties and focusing on the terroir expression of wine, thanks to working with nature, not against it. Seewines follows the principles of biodynamics, both in the vineyards and in the wine production itself, maintains the biodiversity in and around the vineyards and practices the most sparing and environmentally friendly viticulture.

Struma Valley

The Struma Valley region encompasses the southwestern part of Bulgaria and the Bulgarian part of Macedonia. The climate in the region is specific and is strongly influenced by the warm currents from the Mediterranean Sea. The main grape varieties here are the local endemic variety Broad Melnik Vine, Melnik 55 (a cross between Broad Melnik Vine and the French variety Valdigie), but also the international varieties Cabernet Sauvignon, Merlot, Syrah, and others. Due to the dry climate and high temperatures, the wines develop warm southern tones in the aroma, with hints of ripe fruits and a dense rich body. Of particular interest are the wines from Broad Melnik Vine, partly due to the fact that the variety is difficult to cultivate, as it ripens in late autumn. Today, the region is the most dynamically developing in Bulgaria, with many new, small, family wineries increasingly focused on the quality and terroir expression of the wines they produce.

Melnik or Shiroka Melnishka loza ( Broadleaved vine of Melnik ) is an exceptionally rare variety grown only in the region of the town of Melnik and specifically in the appellation of Harsovo village. Melnik can produce powerful wines that respond well to extended maturation in oak. They tend to be exotically perfumed, richly textured and have ample tannins. Actually, the variety benefits from the long, stable autumn weather of the region and the main challenge for the producer is to have the patience to wait for the full ripeness of this late ripening variety - which usually happens in mid-October.
