The grapes for the 2022 harvest come entirely from our vineyards located in the village of Harsovo, Melnik region - situated on sandy and permeable soils. The climate there is characterized by high daytime temperatures and cool air currents in the evening, which descend from the surrounding mountains. The vineyards are grown organically, following biodynamic practices. The harvest is entirely manual and takes place in mid-August. The fermentation of the three varieties occurs together, for about a month, in stainless steel containers and at low temperatures to preserve the fresh aromas of the fruit. After its completion, the wine ages on the fine lees and for 2 months, a technique called batonnage is applied, which helps improve and enrich the flavor profile. The color is pale straw yellow with fresh greenish hues. Initially, a pleasant and subtle aroma is perceived, but after aeration, the wine becomes quite complex with a fruity-floral character. Both green apple and citrus aromas are felt, complemented by white flowers. The flavor aroma overlaps with the nose, complemented by a pleasant minerality. The sweet start in the taste is well balanced with a pleasant and long freshness. The rich and dense flavor profile is preserved for a long time and lasts. An incredible summer drink and a pleasant accompaniment to more lavish salads with creamy dressing or dishes with seafood and creamy sauce. It can also be consumed in combination with rich cheeses like Munster, Gorgonzola, Camembert, or Brie.

AYA Estate Vineyards

AYA Estate Vineyards is a company, the successor of viticultural knowledge for several generations, with over 80 years of experience in artisanal wine production. These traditions determine the direction of the project - the revival of endemic Bulgarian varieties and focusing on the terroir expression of wine, thanks to working with nature, not against it. The main massifs are located in southwestern Bulgaria, in the village of Harsovo, Melnik region, but also have 10 hectares in northeastern Bulgaria, only 2 km from the Black Sea, near Cape Kaliakra, which determines the freshness of white wines produced by Seewines. , especially emblematic of which is Sauvignon Blanc. The vineyards in Harsovo, from which the Shiroka Melnishka vine grapes are extracted, are over 50 years old, and the new plantations with Sira, although still young, impress with their potential and the pronounced peppery characteristics of the variety. Seewines follows the principles of biodynamics, both in the vineyards and in the wine production itself, maintains the biodiversity in and around the vineyards and practices the most sparing and environmentally friendly viticulture.

Struma Valley

The Struma Valley region encompasses the southwestern part of Bulgaria and the Bulgarian part of Macedonia. The climate in the region is specific and is strongly influenced by the warm currents from the Mediterranean Sea. The main grape varieties here are the local endemic variety Broad Melnik Vine, Melnik 55 (a cross between Broad Melnik Vine and the French variety Valdigie), but also the international varieties Cabernet Sauvignon, Merlot, Syrah, and others. Due to the dry climate and high temperatures, the wines develop warm southern tones in the aroma, with hints of ripe fruits and a dense rich body. Of particular interest are the wines from Broad Melnik Vine, partly due to the fact that the variety is difficult to cultivate, as it ripens in late autumn. Today, the region is the most dynamically developing in Bulgaria, with many new, small, family wineries increasingly focused on the quality and terroir expression of the wines they produce.

Сортът Марсан (Marsanne) е бяло грозде с произход от района на Северна Рона. Той много прилича на сорта Русан, с който традиционно се отглежда и също често се бърка. Извън Франция се отглежда и в Швейцария, Испания, Австралия, Нова Зеландия, Канада и Съединените щати. В Италия той е въведен от войските на Наполеон и се отглежда в Емилия, в района на Пиаченца и в Тоскана. От него се произвеждат вина с интензивни цветове, плодов крушов аромат и нотки на подправки. Предвид захарното съдържание на гроздето, вината, произведени, могат да бъдат богати на алкохол и имат известна склонност към отлежаване в дъб. С отлежаването виното от Марсан придобива още по-тъмен цвят, ароматите стават по-комплексни, на мед, ядки и дюли, а небцето показва почти мазна текстура.
