The vineyards with Grenache, Senso, and Syrah are located in the territory of the village of Harsovo, where the climate is warm, but thanks to the air currents coming from the Aegean Sea and the cooler descending night currents from the surrounding mountains, large diurnal amplitudes are maintained. The soils are sandy and permeable, which leads to better drainage. Biodynamic practices are followed in cultivation. In the second half of August, the parameters of each grape variety participating in the wine begin to be monitored daily. When optimal ripeness is reached, the harvest takes place. This happens in the first days of September. The three grape varieties are processed and fermented together in stainless steel vessels at a temperature of up to 15°C. The process concludes within 20 days, after which the wine undergoes stabilization stages and minimally invasive treatments. The goal is to avoid a decrease in the intensity of the flavor-aromatic profile of the drink. Very pale, beautiful pearl-rose color. Neutral nose with not particularly intense notes of gunpowder, dry flowers, and white cherries. Light body, ethereal, finishing fruity, relatively juicy. Delicate rosé, dry, medium-long, and well-balanced. It could be consumed both on its own and in combination with lighter foods. Grilled vegetables, seafood, and white meats are an excellent accompaniment to the wine.

AYA Estate Vineyards
AYA Estate Vineyards is a company, the successor of viticultural knowledge for several generations, with over 80 years of experience in artisanal wine production. These traditions determine the direction of the project - the revival of endemic Bulgarian varieties and focusing on the terroir expression of wine, thanks to working with nature, not against it. The main massifs are located in southwestern Bulgaria, in the village of Harsovo, Melnik region, but also have 10 hectares in northeastern Bulgaria, only 2 km from the Black Sea, near Cape Kaliakra, which determines the freshness of white wines produced by Seewines. , especially emblematic of which is Sauvignon Blanc. The vineyards in Harsovo, from which the Shiroka Melnishka vine grapes are extracted, are over 50 years old, and the new plantations with Sira, although still young, impress with their potential and the pronounced peppery characteristics of the variety. Seewines follows the principles of biodynamics, both in the vineyards and in the wine production itself, maintains the biodiversity in and around the vineyards and practices the most sparing and environmentally friendly viticulture.

Struma Valley
The Struma Valley region encompasses the southwestern part of Bulgaria and the Bulgarian part of Macedonia. The climate in the region is specific and is strongly influenced by the warm currents from the Mediterranean Sea. The main grape varieties here are the local endemic variety Broad Melnik Vine, Melnik 55 (a cross between Broad Melnik Vine and the French variety Valdigie), but also the international varieties Cabernet Sauvignon, Merlot, Syrah, and others. Due to the dry climate and high temperatures, the wines develop warm southern tones in the aroma, with hints of ripe fruits and a dense rich body. Of particular interest are the wines from Broad Melnik Vine, partly due to the fact that the variety is difficult to cultivate, as it ripens in late autumn. Today, the region is the most dynamically developing in Bulgaria, with many new, small, family wineries increasingly focused on the quality and terroir expression of the wines they produce.

Grenache
Grenache (Garnacha) is a red-wine grape grown extensively in France, Spain, Australia and the United States. Grenache is the French name for the grape, while in Spain it is known as Garnacha, and on the island of Sardinia they call it Cannonau. In France it is most commonly found in the classic Southern Rhone Blend ( it is the main grape variety in Chateauneuf-du-Pape) but also plays a main role in one of southern France's signature Rosè wine style in Provence.
