Ivo Varbanov
There is a lot to be said about Ivo Varbanov and there will still be little. It is a phenomenon - both on the world music scene and on the wine scene. In 2003 he started looking for plots with the help of Professor Marin Petkov, then 70 years old, who was the man who drew the wine list of Bulgaria in the 60s. South Sakar is the wine region that wins the interest of Ivo Varbanov. The project is a great challenge and a dream based on the belief in biodynamic and organic farming. The aim is for the wines to be positioned on a par with the wines of the best regions in the world and they seem to have taken the path to success. Many winique moments with the wines and music of Ivo Varbanov are waiting for you.

Thracian valley
In this region, which includes Southern Bulgaria, the climate is moderately continental, protected from the northern winds thanks to the Balkan Mountains, with a good distribution of rainfall. It includes the central parts of the Thracian Plain and parts of Sakar. Most of the red grape varieties are concentrated in this area. The varieties grown include 'Mavrud', 'Merlot', 'Cabernet Sauvignon', 'Red Muscat', 'Pamid', and others. The climatic conditions of the region favor the production of rich, dense, memorable red wines from the varieties 'Cabernet Sauvignon' and 'Mavrud'. Good wines from the local variety 'Mavrud' are particularly valued because they combine the aroma and taste of red berries, spices, and herbs.

Merlot
Southwest of France is Merlot’s birthplace - the regions of Saint-Émilion and Pomerol. Merlot is nowadays widely planted across the world much like Cabernet Sauvignon because it is an early maturing grape variety and because of its ability to ripen fully even in slightly cooler climates. Smooth, velvety, soft and rounded - an “easy drinking" wine with tender tannic structure - these are the common descriptions of Merlot wines.
