The soils are sandy-clay carbonates. The exposure is southeast. Altitude – 90 m. The grapes are cooled and infused for 3-5 days. After the natural rise in temperature, fermentation is controlled within the range of 20-22°C. After fermentation, the grape pomace is pressed in Bulgarian oak barrels for aging. The wine ages for 8-9 months in Bulgarian barrels on the fine lees. The wines undergo minimal processing and are unfiltered. The appearance of noble sediment is possible.

Black Sea region

The Black Sea coast is an area where nearly 30% of Bulgarian vineyards are concentrated. The climate, with warm summers and mild winters, is suitable for growing white varieties. Autumn is warm and prolonged, which favors the accumulation of enough sugars for the production of fine white semi-dry wines. Over 50% of the white grape varieties in Bulgaria are grown here, and the most common are Dimyat, Riesling, Chardonnay, Muscat Ottonel, Traminer, and even Sauvignon Blanc. The wines have a pleasant fruity aroma, a rich taste, and elegant freshness. The old endemic variety Dimyat, besides being suitable for dry wines, is often used for the production of dessert wines, as well as for fine aromatic distillates.

Syrah

Syrah

Syrah/Shiraz - Two names of one and the same grape variety - the winemakers from the Old world use Syrah and the ones from the New world - Shiraz. The grape is a deep red, even the pulp, therefore this variety is not suitable for blanc de noir wine style. Syrah wine has specific floral aromas in its youth and develops notes of herbs and spices such as white and black pepper as it ages. These varietal specifics come out better when blended with a small amount of Viognier - a method gaining popularity more and more around the world. Syrah produces wines capable of ageing and improving over decades, which enhances its plummy and almost oriental spicy flavours.
