Bottled Opinions e проект на енолога Десислава Хитова и винения дегустатор и журналист Яна Петкова. Замислен като женски винен проект, Bottled Opinions е най-вече изразяване на мироглед, откривателство и разместване на границите. Идеята ни е всяка година да подбираме сортове от различни лозя в страната и да ги претворяваме така, както искаме да ги покажем на публиката. Искаме да правим вина извън масовите, натурални, със стил и визия, които да провокират сърцето и ума. Главната роля играе Десислава Хитова, защото без нейните познания и ръце нямаше да съществуваме. Поддържащата роля се изпълнява от Яна Петкова, която дава приноса си в маркетинговите дейности по проекта.

Thracian valley
In this region, which includes Southern Bulgaria, the climate is moderately continental, protected from the northern winds thanks to the Balkan Mountains, with a good distribution of rainfall. It includes the central parts of the Thracian Plain and parts of Sakar. Most of the red grape varieties are concentrated in this area. The varieties grown include 'Mavrud', 'Merlot', 'Cabernet Sauvignon', 'Red Muscat', 'Pamid', and others. The climatic conditions of the region favor the production of rich, dense, memorable red wines from the varieties 'Cabernet Sauvignon' and 'Mavrud'. Good wines from the local variety 'Mavrud' are particularly valued because they combine the aroma and taste of red berries, spices, and herbs.

Rubin
Rubin Bolgarskii, or simply Rubin, is a dark-skinned crossing of Nebbiolo and Syrah created in Pleven in 1944. Rubin is grown not only in Bulgaria but also in Moldova, Romania and Slovenia. The wines are of good-quality and high in content of anthocyanins, the compounds responsible for the deep colour of the wine. Rubin's peppery flavour can be attributed to the Syrah, as well as its pleasant crushed-violet aromatic profile, while the tannic structure comes from the Nebbiolo. Wines made from this variety are often aged in barrel where the vanilla and smoky flavours soften the tannins further.
