Rosalea Cabernet Sauvignon Writer's Wine 2021
Art. # 4092On the soft hills of the Sakar mountain, not far from the town of Harmanli, at an altitude of 130 m, on cinnamon and gray forest soils, are the vineyards of Rosalea with Cabernet Sauvignon. The grapes were harvested in late September to early October. Fermentation took place in 4 small containers with a capacity of 500 and 750 liters, with manual immersion of the cap and rinsing.
The pearl in the final blend is the Cabernet from their 'bio' vineyard.
When draining the wine after the completion of alcoholic fermentation and pressing the solid parts in a basket press, the free run is separated from the press fractions and only it enters the final blend of the wine. Malolactic fermentation took place in barrels and the aging of the wines in them continues for 10 months.
Magnificent Cabernet with aging potential in the bottle. It will pair excellently with a grilled steak.

Thracian valley
In this region, which includes Southern Bulgaria, the climate is moderately continental, protected from the northern winds thanks to the Balkan Mountains, with a good distribution of rainfall. It includes the central parts of the Thracian Plain and parts of Sakar. Most of the red grape varieties are concentrated in this area. The varieties grown include 'Mavrud', 'Merlot', 'Cabernet Sauvignon', 'Red Muscat', 'Pamid', and others. The climatic conditions of the region favor the production of rich, dense, memorable red wines from the varieties 'Cabernet Sauvignon' and 'Mavrud'. Good wines from the local variety 'Mavrud' are particularly valued because they combine the aroma and taste of red berries, spices, and herbs.

Cabernet Sauvignon
This is probably the most famous red wine grape variety on Earth - a natural crossing between Cabernet Franc and Sauvignon Blanc. From its origins in Bordeaux, this vine has successfully spread to almost every wine growing country in the world. Cabernet Sauvignon wines always demonstrate a handful of common character traits: deep color, excellent tannic structure and aromas of black berries and spices.
