Сгушено сред спиращите дъха Мадарски скали, Винарско имение Симента е дългоочакваното сбъдване на една мечта. Винарна съчетава красотата на историческия пейзаж с авангардна технология, която напълно съответства на стила на вината. Мадарското плато осигурява драматичен и вдъхновяващ фон, като същевременно допринася за микроклимат, който е идеален за отглеждане на висококачествено грозде. Освен на невероятна гледка, винарната се радва и на прохладата от планината, както и на повлияния от морето климат. Първите лозя са засадени през 2006. Днес Симента разполага с 30 ха, като сортовете са съобразени с тероара, който би развил напълно тяхната индивидуалност. През 2019 стартира и изграждането на производствена част, магазин, ресторант и дегустационна зала. Избата е с капацитет 100 т, като целта е да се правят къси серии бутикови вина. Основно винарната е ориентирана към производство на бели вина – изключителен интерес представлява сортът Алиготе. Червените сортове се отглеждат в Сакар – доказал се район за висококачествено грозде.

This region extends from the banks of the Danube River to the slopes of the Stara Planina, encompassing the fertile Danube plain. It is characterized by a moderate continental climate with hot summers and a large number of sunny days. The varieties 'Muscat Ottonel', 'Gamza', 'Cabernet Sauvignon', 'Merlot', 'Chardonnay', 'Aligoté', 'Pamid', and others are widespread. Here, dry white wines, sparkling wines made using classical technology, and quality red wines are produced, which are characterized by a rich fruity aroma and fresh taste. A typical local variety is Gamza, also known in Serbia and Hungary as Kadarka. This is a red variety mainly grown in the Vidin and Pleven regions, which ripens at the end of September and produces fresh, fruity, and pleasantly tart wines with a characteristic aroma of raspberries and forest fruits.
