Art. # 4232100 % The wide Melnik vine from the Ayia Estate vineyards is located in the lands of the villages of Harsovo and Kromidovo. The average age of the vines is around 50 years, and they are cultivated by adhering to biodynamic practices in viticulture. Their deep root system helps supply minerals and trace elements, which inevitably reflects on the structure and terroir expression of the resulting wine. The climate in the area is warm, thanks to the air masses coming from the Aegean Sea along the Struma River valley, but in the evening, cooler currents descend from the surrounding mountains, contributing to greater diurnal amplitudes. This Mediterranean influence also determines the minimal rainfall in August and maximum after harvest (at the end of October), which helps achieve optimal ripening of the grapes from this endemic late-ripening variety. The soils in the vineyards in the village of Harsovo are sandy with a high percentage of limestone and low humus content, with the characteristic light whitish color of Melnik. The soils in the area of Kromidovo are heavy, clayey, and reddish-brown with a high iron content. These sensitive differences in terroir determine the complexity in the wine.
The harvest takes place on October 21 after the desired fruit characteristics are reached. Alcoholic fermentation starts after a two-day cold maceration. The process is carried out at lower temperatures than those typical for red wine fermentation and using isolated and selected yeasts from our vineyards. After this stage, the wine is separated from the solids and undergoes malolactic fermentation. 50% of the quantity ages in old oak barrels for 1 year.
The color is typical for the variety, transparent, sparkling ruby red. A complex nose with an abundance of ripe cherries, juicy cherries, pipe tobacco, and dark chocolate. The taste complements the aromas with pleasant hints of smoke and herbs. The wine is elegant, with a medium body, and the aftertaste is rich and sufficiently long with a memorable finish.
Due to its elegant and delicate structure, the wine would pair well with fresh salads combined with light meats without heavy sauces, as well as with various vegetarian dishes. For those who enjoy experimenting, we recommend pairing it with light desserts and fruit cakes.

AYA Estate Vineyards
AYA Estate Vineyards is a company, the successor of viticultural knowledge for several generations, with over 80 years of experience in artisanal wine production. These traditions determine the direction of the project - the revival of endemic Bulgarian varieties and focusing on the terroir expression of wine, thanks to working with nature, not against it. Struma Valley
The Struma Valley region encompasses the southwestern part of Bulgaria and the Bulgarian part of Macedonia. The climate in the region is specific and is strongly influenced by the warm currents from the Mediterranean Sea. The main grape varieties here are the local endemic variety Broad Melnik Vine, Melnik 55 (a cross between Broad Melnik Vine and the French variety Valdigie), but also the international varieties Cabernet Sauvignon, Merlot, Syrah, and others. Due to the dry climate and high temperatures, the wines develop warm southern tones in the aroma, with hints of ripe fruits and a dense rich body. Of particular interest are the wines from Broad Melnik Vine, partly due to the fact that the variety is difficult to cultivate, as it ripens in late autumn. Today, the region is the most dynamically developing in Bulgaria, with many new, small, family wineries increasingly focused on the quality and terroir expression of the wines they produce.

Broad-Leaved Melnik
Melnik or Shiroka Melnishka loza ( Broadleaved vine of Melnik ) is an exceptionally rare variety grown only in the region of the town of Melnik and specifically in the appellation of Harsovo village. Melnik can produce powerful wines that respond well to extended maturation in oak. They tend to be exotically perfumed, richly textured and have ample tannins. Actually, the variety benefits from the long, stable autumn weather of the region and the main challenge for the producer is to have the patience to wait for the full ripeness of this late ripening variety - which usually happens in mid-October.
