Art. # 5417The vineyard is located in the land of the village of Harsovo and covers an area of 10 decares with a predominantly southern exposure. The average age of the vines is 50-60 years and they are cultivated by adhering to biodynamic practices in viticulture. Their deep root system helps supply minerals and trace elements, which inevitably reflects on the structure and terroir expression of the resulting wine. The soils are sandy with a high percentage of limestone and low humus content with the characteristic light whitish color of Melnik. The climate is warm, thanks to the air currents coming from the Aegean Sea, but in the evening, cooler currents descend from the surrounding mountains, contributing to greater diurnal amplitudes. This Mediterranean influence also determines the minimal rainfall in August and maximum after harvest (October-November), which helps achieve optimal ripening of the grapes from the endemic late-ripening variety. The harvest takes place on November 17 after the desired characteristics of the fruit are reached. Alcoholic fermentation starts after a week of cold maceration, and after its completion, the wine is immediately separated to avoid unwanted roughness of taste. Malolactic fermentation occurs in stainless steel vessels, in which the wine is stored until bottling. The color is typical for the variety, a translucent ruby red. The aroma is rich, predominantly fruity with characteristic nuances of red stone fruits. The taste is distinctly spicy, with noticeable notes of black pepper and spices. The tannins are soft, excellently balancing the elegant style of the wine. Slightly chilled, this wine would be suitable for consumption with typical Bulgarian meat and vegetarian dishes. When paired with foreign cuisine, it performs better in combination with light dishes without creamy sauces. It pairs well with hard cheeses, lean meats, and roasted vegetables, and its spicy notes make it a wonderful accompaniment to light chocolate desserts (such as soufflé).

AYA Estate Vineyards is a company, the successor of viticultural knowledge for several generations, with over 80 years of experience in artisanal wine production. These traditions determine the direction of the project - the revival of endemic Bulgarian varieties and focusing on the terroir expression of wine, thanks to working with nature, not against it. The vineyards in Harsovo, from which the Shiroka Melnishka vine grapes are extracted, are over 50 years old, and the new plantations with Sira, although still young, impress with their potential and the pronounced peppery characteristics of the variety. Seewines follows the principles of biodynamics, both in the vineyards and in the wine production itself, maintains the biodiversity in and around the vineyards and practices the most sparing and environmentally friendly viticulture.

Struma Valley
The Struma Valley region encompasses the southwestern part of Bulgaria and the Bulgarian part of Macedonia. The climate in the region is specific and is strongly influenced by the warm currents from the Mediterranean Sea. The main grape varieties here are the local endemic variety Broad Melnik Vine, Melnik 55 (a cross between Broad Melnik Vine and the French variety Valdigie), but also the international varieties Cabernet Sauvignon, Merlot, Syrah, and others. Due to the dry climate and high temperatures, the wines develop warm southern tones in the aroma, with hints of ripe fruits and a dense rich body. Of particular interest are the wines from Broad Melnik Vine, partly due to the fact that the variety is difficult to cultivate, as it ripens in late autumn. Today, the region is the most dynamically developing in Bulgaria, with many new, small, family wineries increasingly focused on the quality and terroir expression of the wines they produce.

Broad-Leaved Melnik
Melnik or Shiroka Melnishka loza ( Broadleaved vine of Melnik ) is an exceptionally rare variety grown only in the region of the town of Melnik and specifically in the appellation of Harsovo village. Melnik can produce powerful wines that respond well to extended maturation in oak. They tend to be exotically perfumed, richly textured and have ample tannins. Actually, the variety benefits from the long, stable autumn weather of the region and the main challenge for the producer is to have the patience to wait for the full ripeness of this late ripening variety - which usually happens in mid-October.
