Charalambiev's H'ART Herbal Infused Pinot Noir 2018

The vinification begins with a cold maceration lasting 2 days, followed by a controlled prolonged alcoholic fermentation in stainless steel vessels, retention of the wine with the solids after fermentation for 2 days, and subsequent rapid separation. As a result of the high sugars in the raw material, a naturally semi-sweet wine is obtained with 32 grams per liter of natural residual sugar and 14.5% alcohol. After draining, the wine is stored in a stainless steel container for an extended period until 2020, when the resulting Pinot Noir is used as a base for creating H’ART HERBAL INFUSED PINOT NOIR – it is infused for a period of 14-21 days with quinces, apples, and 18 herbs, also collected from the area of the vineyard from which the grapes for it come.

Семейно начинание, започнало през 2009 г. , когато Димитър Хараламбиев засажда лозе край Плевен. За него и съпругата му Цветелина лозарството и винарството стават начин на живот. Днес се грижат за над 85 ха собствени лозя в землищата на Садовец, Петърница и Горни Дъбник. През 2018 обновяват кооперативната изба на с. Петърница и внедряват модерно оборудване и системи. Производственият капацитет е 1000 хл вино годишно. Произвеждат къси серии вина от създадените в Плевен местни сортове кайлъшки мискет и рубин, също така премиум бели, розе и отличителни червени от шардоне, совиньон блан, гевюрцтраминер, мускат отонел, пино ноар, каберне фран. През 2019 представят първата си реколта – вина с интересен модерен прочит, сред които се отличат сериите H`s – от местни сортове, Royal – премиум шардоне и каберне фран; Trois Visages, показваща трите лица на пино ноар – бяло, розе и червено; както и изразителният сортов The Chosen One Sauvignon Blanc.

This region extends from the banks of the Danube River to the slopes of the Stara Planina, encompassing the fertile Danube plain. It is characterized by a moderate continental climate with hot summers and a large number of sunny days. The varieties 'Muscat Ottonel', 'Gamza', 'Cabernet Sauvignon', 'Merlot', 'Chardonnay', 'Aligoté', 'Pamid', and others are widespread. Here, dry white wines, sparkling wines made using classical technology, and quality red wines are produced, which are characterized by a rich fruity aroma and fresh taste. A typical local variety is Gamza, also known in Serbia and Hungary as Kadarka. This is a red variety mainly grown in the Vidin and Pleven regions, which ripens at the end of September and produces fresh, fruity, and pleasantly tart wines with a characteristic aroma of raspberries and forest fruits.
